Oil is a substance that has a high viscosity at room temperature, contains a high amount of carbon and hydrogen, is immiscible with water, but is easily miscible with other oils. Oils are used for many different purposes, including food, fuel, paint, machinery industry.

Cooking Oils

Vegetable and animal fats are an indispensable part of meals. For example, the frying method is the process of cooking food in oils brought to a high temperature. It is recommended to grease the tray first so that the food cooked in the oven does not stick to the tray. Oil is added to foods that are cooked with water in a saucepan to increase their taste. In addition, oils such as butter, olive oil and margarine are used for breakfast.

Some meat and dairy products contain small amounts of naturally occurring trans fat. But most trans fats are made through an industrial process by adding hydrogen to vegetable oil and causing the oil to solidify at room temperature.

Hydrogen added oil is much less likely to deteriorate than other oils. This is exactly why hydrogen added foods have a longer shelf life. Some restaurants also use partially hydrogenated vegetable oil in their fryers because trans fat does not need to be replaced as often as other oils. All such fats are called trans fats.

Fuels

Oils are used as an energy source because they are easily converted into heat if they are burned in the atmosphere. This energy can be used for heating buildings as well as for generating electricity in thermoelectric power plants. It is among the gasoline and diesel oil types used in internal combustion engines. In addition, oils such as kerosene were used to produce light in lamps, especially in the periods before the use of electricity became widespread.
