White sugar, also called table sugar, granulated sugar, or regular sugar, is sugar made from sugar beet or sugar cane that has undergone a refining process, commonly used in North America and Europe. White sugar (and some brown sugar) produced from cane sugar Bone charcoal may still be used by a few sugarcane refineries in the process. Therefore, white sugar from sugarcane may not be vegan. Beet sugar has never been processed with bone charcoal and is vegan. The refining process completely removes the molasses and makes the white sugar truly sucrose (purity higher than 99.7%), which has a molecular formula of C12H22O11. Therefore, the origin of the sugar produced is chemically indistinguishable ( sugar cane or sugar beet): it is possible to identify its origin by a carbon-13 analysis (similar to the radiocarbon date used in archaeology).
