ice cream, which is consumed in all seasons, is among the most popular foods. It can be milky or fruity, depending on the raw material used in the food preparation stage, which is preferred especially in summer.
Step by Step Ice Cream Making Stages
> The main component of ice cream prepared with milk is cream. Cream taken from milk processing plants is mixed with sugar, carrageenan (thickener obtained from seaweed) or eggs, salep and condensed milk in industrial mixers.
> The mixture is then sent to the pasteurization vessel via pipes. The mixture coming to the pasteurization vessel is heated up to 82 degrees and purified from germs.
> After the pasteurization vessel, the mixture is pushed into the beater with the help of high pressure pumps and the milk cream is broken into the smallest pieces and mixed with the milk completely.
> The mixture is then cooled down to 2 degrees and poured into storage tanks. In these tanks, vanilla, cocoa, caramel or fruit flavors and colorants are added to the mixture according to the type of ice cream.
> The mixture, which is kept in storage tanks for eight hours, is sprayed with air for a soft and creamy consistency. Finally, small pieces of hazelnut, pistachio, walnut, almond and fruit pieces are spread evenly over the entire area of the ice cream with the help of a shovel.
> Prepared ice cream is packaged and frozen up to -23 degrees with the help of air blowing propellers.
